INGREDIENTS:
- 3 garlic cloves, finely grated or minced
- 1 tablespoon tamarind concentrate (or extract)
- 1 tablespoon sambal oelek or other chile paste
- 2 teaspoons grated fresh ginger
- 2 teaspoons kosher salt, more as needed
- 1 ½ teaspoons ground cumin
- 1 teaspoon fish sauce
- 1 teaspoon ground turmeric
- 2 lbs. bone-in pork chops, 1 ½ inches thick
- 2 tablespoons coconut oil, or grapeseed oil
- Scallions, thinly sliced
- Lime wedges, for serving
INSTRUCTIONS:
- Mix garlic, tamarind concentrate, sambal oelek, ginger, salt, cumin, fish sauce, and turmeric to make marinade.
- Place pork chops in a dish or bag, pour marinade over them, and refrigerate for at least 2 hours.
- Preheat the grill to medium-high heat and brush the grill grates with oil.
- Remove pork chops from marinade and grill for 6-7 minutes on each side until internal temperature reaches 145°F (63°C).

Rest for a few minutes then garnish with thinly sliced scallions and serve with lime wedges.
