Care and Maintenance
Caring for Your Damascus Steel Knife
Our Damascus steel is crafted from forge-welded layers of 15N20 steel and 1075 steel. This combination ensures an excellent edge and a beautiful pattern that will develop a unique patina over time. Proper care will ensure your knife lasts a lifetime.
General Care Tips
- Moisture is the Enemy: Never leave your blade in standing water, on a damp towel, or in direct contact with leather. Do not wash in a dishwasher.
- Immediate Care: After use, rinse the blade clean under running water, wipe it dry with a clean cloth, and lightly oil it using food-safe mineral oil. Store the knife in a dry place.
Oiling
- Use Food-Safe Oil: Avoid oils that go rancid, such as olive oil. We recommend mineral oil as it is food-safe, affordable, and readily available.
Washing
- Gentle Cleaning: Rinse your knife under running water, wash with a lightly soapy dish sponge, rinse again, and dry thoroughly.
Refreshing the Pattern
- Coffee Etching: To refresh the Damascus pattern, use hot black instant coffee as an etchant. Wash and dry the blade, wipe with methylated spirits, immerse the blade in the coffee for 15 minutes to an hour, and check periodically. Once the desired pattern is restored, wash, oil, and store the blade.
How to Sharpen Your Knife
Using a Whetstone
- Soak the Whetstone: Soak it in water for 5-10 minutes until air bubbles stop appearing.
- Sharpen at the Correct Angle: Hold the knife at a 20-degree angle and slide the blade forward along the whetstone, starting from the heel to the tip.
- Repeat on Both Sides: Flip the knife and repeat the process to ensure a sharp edge.
Honing Your Knife
- Regular Honing: Use a honing steel to maintain the blade's edge between sharpenings. Hold the steel vertically, maintain a 20-degree angle with the blade, and gently draw the blade down the steel from heel to tip.
Cutting Board Care
Proper care of your cutting board will prolong its life and maintain its appearance.
Cleaning
- Wash After Every Use: Clean with a wet sponge or towel using a small amount of dish soap, rinse, and dry immediately.
- Avoid Prolonged Soaking: Do not leave the board submerged in water or put it in the dishwasher.
Oiling
- Apply Mineral Oil: On a clean, dry board, apply mineral oil generously. Let it soak in, wipe off excess, and stand to dry. Repeat monthly or when the board feels dry.
General Tips
- Stain Removal: Use lemon juice or white vinegar to treat stains.
- Avoid Harsh Cleaners: Do not use bleach or abrasive cleaners.
Apron Care
Different apron fabrics require different care methods. Always refer to specific care labels.
Washing
- General Washing: Most aprons are machine-washable. Use cold water and mild detergent, and wash separately to prevent color transfer.
- Waxed Canvas: Spot clean only with a damp cloth. Do not machine wash, bleach, or iron.
Drying and Ironing
- Drying: Line dry or tumble dry on a low setting to avoid shrinkage and fading.
- Ironing: If necessary, iron on low or medium heat, and always test on a small area first.
Stain Removal
- For Fresh Stains: Use a solution of salt and water or dab with rubbing alcohol or white vinegar.
- For Set-In Stains: Use a commercial stain remover according to the packaging instructions.
