Grilled Vegetable Fajitas

    INGREDIENTS:

    • 2 bell peppers, sliced
    • 1 red onion, sliced
    • 1 zucchini, sliced
    • 1 yellow squash, sliced
    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • 1 teaspoon chili powder
    • 1 teaspoon ground cumin
    • Salt and pepper to taste
    • 8 small flour tortillas
    • Optional toppings: salsa, guacamole, sour cream, shredded cheese

    INSTRUCTIONS:

    1. Preheat the grill to medium-high heat.
    2. Toss the sliced vegetables with olive oil, garlic, chili powder, ground cumin, salt, and pepper.
    3. Grill the vegetables in a grill basket or on skewers for 10-12 minutes, turning occasionally, until tender and slightly charred.
    4. Warm the tortillas on the grill for 1-2 minutes on each side. Assemble the fajitas by placing grilled vegetables onto warmed tortillas.
    5. Add optional toppings such as salsa, guacamole, sour cream, and shredded cheese.
    6. Roll up the tortillas and serve hot.
